Apricot yoghurt muffins

These apricot yogurt muffins are so soft and delicious, with great apricot flavor. The perfect breakfast or snack that the whole family will love!

Ingredients​

  • 2 cups all-purpose flour
  • 1 egg
  • ¾ cup granulated sugar
  • 1 cup Greek yogurt
  • ½ cup melted butter
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 Tablespoons milk or oil
  • 1 cup chopped dried apricots

Instructions​

  • Preheat oven to 176 °C . Place cupcake liners in muffin tins (alternatively, you could simply grease the muffin tins).
  • Boil 2 cups of water in the microwave. Place apricots in the boiling water for five minutes to soften. Set aside.
  • In a large bowl, mix dry ingredients together. Create a well in the center and set aside. Mix yogurt, melted butter, egg and milk in a separate bowl just until combined. Pour into dry ingredients and mix just until combined. Do not over-mix.
  • Drain apricots and add to the mixture. Fold in gently.
  • Fill cupcake liners 2/3 of the way full with batter (an ice cream scoop works perfectly for this). Bake for 20-24 minutes, or until tops are lightly browned and a toothpick inserted into the center comes out clean.

Ive always loved apricots as well, saw the first this sessons in a local yesterday, pretty small though they were, passed on them ones

These are for dried apricots in a bag and taste better than fresh 😋

There seems to be two kinds when they are stocked in the stores, the smaller ones arent as tasty, I look for the largers ones, they never make the cooker I devour them before that, fresh for me :p
Limited stock in WA, theres only a few orchids up in the hills
 
Make sure the are dried apricots from Turkey.
I find those are the most pliant and have the best flavour.

😳sorry but it’s only 🇦🇺 Australian dried apricots for me I will not support overseas goods if I don’t have too, and there is nothing wrong with our dried apricots.😋
Have to disagree with you...Turkish apricots are far superior both in taste and texture.
I find that the Austrian food brands are rather bland compared to the imports.
Take tomatoes, for example. Australian ones have a lot of liquid and taste bland. I buy tomatoes made in Italy.
The meat too tastes terrible. I haven't eaten beef for close to 50 years... the smell of it makes me want to puke.
As an added bonus I find that the imports are cheaper.
