Apricot Custard Flan

This is a recipe I've cooked many times for my family. It was sourced from a Govt. website for healthy recipes.

¼ cup plain flour
1 ½ tbs caster sugar
2 eggs
1 cup milk
1/2 tsp vanilla extract
825 g canned apricots in natural juice, drained
1 tsp ground cinnamon

Combine flour, sugar, eggs, milk and vanilla in a bowl and mix well.

Place apricots with cut side down into 22cm dish (sprayed with olive oil), then pour egg mixture on top and sprinkle with cinnamon.

Bake at 180°C fan forced for 30 - 35 minutes, or until custard is set.

Stand for 5 minutes before serving.

Variation: Use 600gr of any kind of fresh seasonal fruit OR canned fruit (drained of natural juice) including peaches, plums, pears, apples, pitted cherries or frozen berries.

I do like simple recipes, nothing too challenging these days. The other day, I made it with fresh strawberries, as the fruit shop had them for $6/kilo. I added a few defrosted blueberries. I put too many strawberries I reckon, because it was too juicy to cut up when warm. However, fine when cold.

Yesterday I was going through my grandmother's recipes and thought meals were really simple back then.

I'm also thinking if we went back to those recipes we would save as well.

I was gagging though at her tripe recipe (my grandfathers favourite) and steak and kidney pie recipe

Yes, I agree it can be cost effective, plus thankfully those organ meat recipes have gone out of favour. :sneaky:
