Apple Tea Cake

This has to be one of my family's all time favourite cake.
Served just by it self or with a dab of fresh cream .

You can add more apples to the top than what recipe states.

Recipe by Womens Weekly Food

Ingredients
  • 185 gram butter
  • 2 teaspoon grated lemon rind
  • 2/3 cup caster sugar
  • 3 eggs
  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1/3 cup milk
  • 2 apples
  • 1 teaspoon gelatine
  • 2 tablespoon water
  • 2 tablespoon strained apricot jam
Method
1. Grease a 20cm springform pan.

2. Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs one at a time, beat until combined. Transfer mixture to large bowl, stir in sifted flours and milk. Spread into prepared pan.

3. Peel apples, cut into quarters, remove cores. Make lengthways cuts into rounded sides of apple quarters, cutting about three quarters of the way through. Arrange quarters, rounded side up, around edge of cake. Bake in moderate oven for about 1 hour.

4. Sprinkle gelatine over water, dissolve over hot water, add jam. Spread half jam mixture over hot cake, cool cake in pan. Remove from pan, brush with remaining warmed jam mixture.

Moderate oven temps are 170 deg fan-forced or 180 deg normal

True , but I'm thinking its the cost . They charge heaps for cakes.

I went to a wedding not long ago and at the end of the night one of the bridesmaids was taking home one of the layers of the 3 tier cake when the brides mum asked why she was taking it. The bridesmaid replied that the bride told her too take it as it was a pretend layer. I think it was foam. Her mum was shocked. She had given her money for the wedding.
Her mum told my daughter she was to get a real cake and she wanted to pay for it. ( she us my daughters Godmother)

The Greeks freeze one layer and would cut it on the first anniversary.

I made my sisters wedding cake and two of my cousins plus a few friends.

I've been to a lot of weddings at least 3 a year, I don't think I've seen fruit cake as the wedding cake in 20 years .

It`s a shame, I enjoy a fruit cake and as for a wedding cake, we used to take it out on our anniversary and have a slice. It was preserved with alcohol.

I marinate the fruit in scotch or brandy, orange juice and jig jam for 4 to 6 weeks before making the cake.

I love fruit cake with royal icing

I'm going to make a fruit cake in may and will marinate the mixture in two weeks. I will post a step by step recipe when I'm making it

And how many years is your anniversary 😊

Please do that, because after reading this post I`m making one soon too. But I`ll wait to see how you make yours first!:love:
 
All these beautiful, fancy cakes , you are definitely the cake queen . If I only look at it , I put on 10kg.
For that reason , I have only small amounts of sweet treats . I do make all my baking from scratch as well and change the recipe’s to my liking .

Same here I loathe packet mixes they are full of sugar ☹️
My niece gets free cake mixes etc from her company they’re a distributor for greens etc. she gave me some freebies but I tried them once yuk too sweet.so I told her thanks but no thanks. ☹️
