Apple,Buttermilk and Maple Syrup Muffins

I have been trying a lot of new muffin recipes and I'm going to post our favourites

Cook time 25 min
Makes 12
Ingredients
375mls of buttermilk
70g bran
185 mls maple syrup
1 egg lightly beaten
60 mls vegetable oil
1 granny smith apple peeled, cored and chopped
250g self-raising flour
1 teaspoon ground cinnamon
70g roasted and chopped walnuts or almonds
Method
1. Preheat oven 180°C / 160°C fan-forced. Lightly grease a 12 hole muffin pan and line with paper cases.
2. Combine the bran and buttermilkin a bowl. Stirring to mix well, then set aside for 5 minutes.
3. Add the maple syrup, egg,oil, apple and nuts. Stir to combine well. Sift the flour and cinnamon over the mixture, then gently fold until just combined. Do not over mix, the batter will still be lumpy.
4. Divide the mixture evenly between the muffin cases. Bake for 20 to 25 minutes until a skewer inserted comes out clean. Cool in pan for a few minutes before transferring to a wire rack.
