INGREDIENTS12 SERVINGS
• 150 g plain sweet biscuits, crushed to resemble a fine crumb
• 100 g butter, melted
• 1 x 9 g packet Aeroplane Jelly Lite Mango Passionfruit
• 250 g cream cheese, softened to room temperature
• ¼ cup (40 g) caster sugar
• 1 cup (250 mL) thickened cream
• ⅓ cup (80 g) canned passionfruit pulp in syrup or 2-3 fresh passion fruit
PREPARATION
• 1Line base and sides of a slice pan (16 cm x 25 cm x 3 cm) with baking paper. Place crushed biscuits in a medium bowl, add melted butter and stir to combine well. Spoon crumb mixture onto the base of prepared pan and using the back of a spoon press biscuit crumb evenly over base. Refrigerate while making filling
In a small bowl combine Aeroplane Lite Mango Passionfruit Flavoured Jelly crystals and ½ cup (125 mL) boiling water, stir until dissolved. Set aside.
Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled Mango Passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
Pour cheesecake mixture over biscuit base then randomly spoon remaining passionfruit pulp over and using the tip of a knife pull the pulp through the cheesecake.
Refrigerate for 1-2 hours until set. To serve ].; into slices.
