To make these delicious biscuits, you'll need the following:
  • 125g of unsalted butter at room temperature
  • 125g caster sugar
  • One egg
  • 1 tsp vanilla paste
  • 250g plain flour, plus extra for rolling
  • A pinch of salt
  • 125g white chocolate, melted
  • Gel food colouring
  • Multi-coloured toppings (sprinkles, edible baubles, etc.)


Method:

1. Using an electric whisk, beat the butter and sugar together until they become light and fluffy.

2. Add the egg and vanilla paste to the mixture and beat until everything is well combined.

3. Add the flour and salt and continue to beat until the mixture looks like large crumbs.

4. Bring the mixture together using your hands and form it into a ball. Then, divide the ball into two pieces and flatten each one into a rough disc.

5. Place each disc of dough between sheets of baking paper and roll them out to a thickness of 4-5mm. Make sure to flour the dough on both sides before rolling.

6. Once rolled out, refrigerate the dough discs for at least an hour until they're chilled and stiff.

7. Preheat your oven to 180°C and line two baking trays with baking paper.

8. Use egg or bunny-shaped cookie cutters to stamp out your desired biscuit shapes. Place the shapes on the prepared baking sheets, leaving a small gap between each one.



9. Re-roll any trimmings using flour and repeat until all the dough is used. Remember to work with cold pastry, as it's easier to handle.

10. Bake the biscuits for 12 minutes or until they turn golden. Carefully transfer them to a cooling rack and let them cool completely before decorating.

11. To decorate the biscuits, melt white chocolate and add some gel food colouring for a pop of colour. Spread the melted chocolate over the biscuits and add your favourite toppings like sprinkles, edible baubles, and more.
