So, if there's no sugar, why does it taste like caramel?
Apparently, the secret behind this flavour is the use of medjool dates. The fruit is often used as a delicious and healthy alternative to refined sugar and has a caramel-like flavour that is perfect for use in oatmeal, smoothies, dressings, and sauces.

Making the sugar-free caramel sauce is also simple: just simply soak medjool dates in water for three hours to soften, then strain and reserve the water you used.
Add the dates to a blender with vanilla and a pinch of salt, and blend until smooth. Finally, add the reserved water to make the consistency of the sauce as thin (or thick) as you like.
And that's it! It is now ready to serve.
The sauce can also be stored in the fridge for up to two months.
