15-Minute No-Cook Summer Pizza

A twist on the classic, this no-cook pizza is ready in a flash 🍕

Serves: 4

Ingredients​

  • 8 small white pita bread rounds
  • 200g tub spring onion dip
  • 425g can tuna in oil, drained, flaked
  • 400g tomato medley mix, roughly chopped
  • 4 baby cucumbers, thinly sliced
  • 1 large yellow capsicum, finely chopped
  • 2 eschallots, thinly sliced
  • 150g fetta, crumbled
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp mixed dried herbs
  • 1/2 cup fresh baby basil leaves

Method​

  • Step 1
    Spread pita bread rounds with dip. Top with tuna, tomato, cucumber, capsicum, eschallot and fetta
  • Step 2
    Whisk oil, vinegar and dried herbs together in a small bowl. Season with salt and pepper. Drizzle over pizzas. Sprinkle with basil leaves. Serve.
