15-minute cheese and pepper pasta

Ingredients
  • 375g dried tubular spaghetti

  • 75g butter, chopped

  • 3 garlic cloves, crushed

  • 3 tsp coarsely ground black pepper (see note)

  • 1 cup finely grated parmesan

  • 1/2 cup finely grated pecorino

  • 1/4 cup finely chopped fresh chives

  • Garlic bread, to serve

Instructions:

1. Cook pasta (375g dried tubular spaghetti) in a large saucepan of boiling, salted water, following packet directions. Drain pasta, reserving 1 cup cooking liquid.

2. Melt butter in a large frying pan over medium-high heat. Add garlic and pepper. Cook, stirring, for 1 minute or until fragrant. Stir in reserved pasta water. Add parmesan and pecorino. Whisk to form a thin sauce. Add pasta. Toss to coat.

3. Sprinkle with chives. Serve with garlic bread.

I think there is too much pasty in this dish and apart from the chive herbs no vegetables at all . Not the most nutritious meal for me .

Some people love meals like this and as long as you eat them in moderation it's ok . It's not saying eat every day abd for those who want to eat healthy 24/7 then skip these recipes .
I personally think this is a great recipe and hope she has others

As I said it is not very nutritious , way too much pasta in the dish and no vegetables at all .
So not for me , many people could be happy with the dish , that is anyone’s choice . You just have to respect that it is not for me .

Moderation - a word's use is up to the individual. Drink in moderation? Half a slab of full strength beer instead of 24? Back in my drinking days, 12 beers was "in moderation" per day.

Moderation is don't over eat something , and I believe that goes for everything

You can always add what you like to this dish the emphasis is on quick easy and taste
