15 min fried rice

• 250g packets microwave coconut, chilli and lemongrass basmati rice

• 200g sliced leg ham, torn

• 1/2 pineapple, peeled, roughly chopped into 2cm pieces

• 260g jar chargrilled red capsicum, drained, roughly chopped

• 1/2 small red onion, thinly sliced

• 125g snow peas, shredded

• 3/4 cup fresh coriander sprigs

• 2 tbsp sweet chilli sauce

• 1 1/2 tbsp lime juice, plus extra lime wedges to serve

• 3 tsp kecap manis

• 2 tsp sesame oil

• 1 garlic clove, crushed

• Sesame seeds, to serve

• Select all ingredients

• Step 1

Microwave rice following packet directions.

• Step 2

Place warm rice, ham, pineapple, capsicum, onion, snow peas and half the coriander in a bowl. Toss to combine.

• Step 3

Place sweet chilli sauce, lime juice, kecap manis, sesame oil and garlic in a small bowl. Stir until well combined. Add half the sauce mixture to rice mixture. Toss to combine.

• Step 4

Divide rice mixture among serving bowls. Sprinkle with sesame seeds and remaining coriander. Serve with remaining sauce mixture and lime wedges.
