10-Minute Cajun Chicken Bites

This recipe is for anyone who loves chicken and wants to have a quick and easy meal. The Cajun chicken bites are full of flavour and can be made in just 10 minutes. This dish is perfect for a busy weeknight or anytime you want a delicious meal. The chicken is cooked in a garlic butter sauce, then deglazed with chicken broth (or white wine), Tabasco, and lemon juice. The result is a flavourful and juicy chicken dish that is sure to please everyone.

To make this dish, you need:

-2 boneless, skinless chicken breasts, cut into bite-sized chunks
-1 teaspoon salt
-1 teaspoon fresh cracked black pepper
-1 ½ teaspoons onion powder
-1/4 cup butter, softened
-1 teaspoon olive oil
-1 teaspoon minced garlic
-1 teaspoon Italian seasoning or Herbes de Provence
-1 tablespoon Tabasco, optional
-1 ½ tablespoons low-sodium chicken broth (or white wine)
-Juice of 1/2 lemon
-1 tablespoon minced parsley
-Crushed red chilli pepper flakes (optional)
-Slices of lemon for garnish

Instructions:

1. First, slice chicken breasts into bite-sized chunks and season with salt, pepper, and onion powder.

2. Heat half the butter and olive oil in a large cast-iron skillet over medium-low heat. Gently stir-fry the chicken bites on all sides until golden brown.

3. Lower the temperature, add the garlic, butter, and Italian seasoning, and stir and cook with chicken bites until fragrant. You might have to work in batches to avoid crowding the pan and have steamed chicken bites instead of brown.

4. Deglaze the skillet with chicken broth (or wine), Tabasco, and lemon juice. Toss the chicken bites in the sauce to coat well.

5. Garnish the garlic butter chicken bites with parsley and crushed chilli pepper flakes. Serve with a side of rice and steamed vegetables for a whole meal.

To make this dish extra special, try using Sriracha as it adds a nice amount of heat without many calories. This dish is also great with a side of potatoes.

I made this dish even more yum by adding par boiled diced potatoes into the chicken mix but made sure to leave the potatoes in the still warm pan after straining them so that all the excess water was not also added into the chicken, loved it
