The problem is that a will is NOT legally binding as it can be (but should not be able to be) challenged by anyone! There should not be any way a person can challenge a will.

That is not always correct! We started a small business 30 years ago and my wife made sure that we contributed to our superannuation every month.. It took us 7 years before we were able to pay all our invoices without having to worry about out which ones we paid and we engaged with the suppliers...
