Mini Quiches

These are perfect for breakfast or as a main meal served with a tossed salad.

I dont eat these as I hate mushrooms but ny family absolutely love them

Ingredients​

  • 250 g bacon finely diced
  • 1 cup mushrooms finely diced
  • 2 eggs
  • 1 cup milk
  • 125 g cheese grated
  • 3 sheets Pampas shortcrust pastry
  • 1 sprinkle dried parsley
  • 1 pinch salt and pepper to taste

Method​

Preheat oven 220°C or 200°C fan-forced
  • Step 1
    Finely dice bacon, mushrooms and onion, then fry in a pan until bacon is cooked and onion is tender. Cool mixture.
  • Step 2
    Line tart tins or muffin tins with small circles of pastry and prick with a fork.
  • Step 3
    Spoon cooled mixture into each pastry tin and sprinkle with grated cheese.
  • Step 4
    Beat eggs and milk in a jug until combined, season with salt and pepper, then pour over mixture in pastry cases and sprinkle with parsley flakes.
  • Step 5
    Bake in a hot oven 220°C or 200°C fan-forced for 5 minutes, then reduce to 180°C or 160°C for a further 10 minutes, depending on the size of tart tins

Thanks Suzanne, my husband was going to make beef marsala curry but the mood passed - he has never made it before. So of course, I said I will make a quiche inspired by your recipes, so I made a bacon, mushroom, red capsicum, green onion quiche to go with salad. Do you have a simple recipe for beef marsala curry that would be man friendly please? 💚💕 xxx

This is a very easy and delicious recipe

Serves 4
Ingredients
  • 1 tbsp Olive Oil
  • 900 g Chuck Steak cut into bite sized chunks
  • 1 large Onion - diced
  • 2 cloves Garlic - finely minced
  • 1 tsp Turmeric
  • 1 tsp Ground Cumin
  • 6 Whole Cloves - optional
  • 1 tsp Ground Coriander
  • 1 tbsp Garam Masala
  • 1 tsp Chili Powder - optional
  • 1 pinch Sugar
  • 3 tbsp Tomato paste
  • 500 ml beef or vegetable stock
  • Sea Salt and Black Pepper to taste

METHOD​

  • Heat the olive oil over a medium high heat in a large dutch oven, skillet or heavy bottomed pan,
  • Season the cubed beef with sea salt and pepper then brown in the oil on all sides. Do this in batches if necessary so the meat sears and doesn't steam.
  • Remove the meat and reserve on a plate.
  • Sauté the diced onion in the same pan until starting to soften, around 8 minutes.
  • Add the minced garlic and, turmeric, cumin, garam masala and sugar. Also add the whole cloves and chili powder if using. Stir for a minute until fragrant.
  • Add the tomato paste and broth. Stir well.
  • Return the beef to the pan and stir to coat in the sauce.
  • Cover the pan and let the curry simmer gently for 2 hours until the beef is tender and the sauce has thickened. Stir occasionally,
  • Remove the cloves before serving if you used them.
I have even left it cook fir 3 hours

I just cooked rice cream, slow cooked beef ragu lasagne , 3 x homemade pizza's and next it is slow cooked lamb shanks. Im having a 10 min break 🤣

I only post recipes I have made and at least 90% of ny family love.

I made a new recipe last night Kofta tray bake. It was lean mince made with 5 spices, bread crumbs and parsley then squashed onto sticks. Added to a tray with zucchini and wedges of onions . I then made a tomato sauce made of tomato paste, lemon juice and water over the top then baked for 20 minutes

My husband and two sons loved them , my daughter liked them but not loved them and one son didn't liked them. So because it was under 90% that loved them I won't post it

Look what my daughter just sent me asking me to make for Sunday for Leo's 1st birthday. And they need to be dairy free because half the kids have allergies 🙄

Im also making all my desert cups, panacotta ect. Two salads and two potato dishes ah plus ricotta eggplant rolls

On Sunday he turns one. Sophie took him into the hospital he was born in Randwick mother's n babies . It's a tradition to take premi babies in when they are one.
She took the nurses and doctors in Donuts and chocolate's, funny how they actually remembered Leo. They even asked ny daughter if she was back at work and at the same hospital.

This is Leo on Saturday visiting the hospital and seeing his star I donated to have put up there.

The Doctors and nurses go above and beyond abd deserve more recognition
