Baked Rice Pudding

This is another desert that takes me back to my childhood and Sunday lunch.

Recipe by taste

Ingredients​

  • 2 cups (500ml) milk
  • 300ml thin cream
  • 1/2 cup (110g) white rice, rinsed, drained
  • 1/3 cup (70g) caster sugar
  • 1 cinnamon stick
  • 2 tsp vanilla bean paste
  • 2 egg yolks
  • Pinch of ground nutmeg

Method​

  • Step 1
    Preheat all ovens to 160°C. Combine milk, cream, rice, sugar, cinnamon and vanilla in a medium saucepan over medium heat. Cook, stirring occasionally, for 5 minutes or until mixture just comes to a simmer. Remove from heat and set aside for 15 minutes for the flavours to infuse.
  • Step 2
    Remove and discard cinnamon. Add egg yolks; stir to combine. Pour rice mixture into a 4-cup (1 litre) capacity ovenproof dish. Sprinkle with nutmeg. Bake, stirring occasionally, for 1 hour or until rice is tender and custard is set. Remove and set aside for 10 minutes to rest before serving.

we had this at boarding school ... and used it to glue the soles back on our shoes, when they came off.
I will eat anything EXCEEPT rice pudding or boiled rice BUT strangely I love Fried Rice

I hated that when I was a kid. My mother used to cook it all the time.
I used to gag when a bit of the top skin went into my mouth.
Don't know why, but I eat in now.

It's the same as I hated vegies as a kid but love them now. The one I would never eat and still won't eat is tripe 🤢

I can live on vegetables and salads and agree with you Suzanne that tripe is a NO NO !!

Oh dear Suzanne, this is truely a beautiful dessert. I especially love the mild vanilla and cinnamon flavour that creates the Baked Rice Pudding into five star dessert. I have tried the Coles brand, but the home made one is much healthier . Thankyou Suzanne. Have a lovely evening. 🙏

My parents loved it but none of us 7 kids touched it. I feel it was because it was a cows stomach.🤢

Oh God yeah, my mother used to cook that vile stuff too. With white sauce. I dreaded it.
