Banana Fritters

These were my Grandfathers speciality.
He would make these and serve with vanilla ice-cream on the side
Serves 4
Ingredients
4 large banana's Either kept whole or cut in half
1/2 cup plain flour
1/2 cup self-raising flour
1 tablespoon caster sugar
2 eggs, lightly beaten
1/2 cup milk
1 teaspoon oil
1 teaspoon vanilla essence
Oil for deep frying
Sugar
Method
1. Sift flours. Add caster sugar and flour into a large bowl. Gradually whisk in eggs,milk,oil and vanilla essence.
2. Dip banana pieces into batter, deep fry in hot oil until lightly browned.
3. Drain on absorbent paper, toss in sugar
4. Serve by itself or with ice-cream
