Healthy Tuna and Tomato Salad

Serves 4

Prep time 10 min

Ingredients

185g tuna in spring water,drained
300g can red kidney beans, drained and rinsed
1 small red onion sliced thinly
250g cherry tomatoes
1/2 cup dresh basil coarsely chopped
1 medium avocado sliced thickly
100g baby rocket

Dressing

2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon finely grated lemon rind
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove crushed

Method

1. Place dressing ingredients in a screw top jar: shake well.

2. Place all ingredients in a large bowl. Pour over dressing and toss gently to combine.
