All-Natural Caramel Truffles​

Serves 15 truffles​

Ingredients​

  • 1/2 cup pine nuts
  • 10 Medjool dates pitted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup desiccated coconut

Instructions​

  • Add pine nuts to a food processor and grind until fine.
  • Add the dates and vanilla and process until the mixture is well combined.
  • Place the coconut onto a flat plate.
  • Roll a teaspoon of mixture into a ball, and then roll in coconut.
  • Continue until all the mixture is rolled.
  • Store in an airtight container in the fridge for up to two weeks.

Crushed nuts sound good too.
 
This recipe is what I make very often and change it every time a little bit . Yes the dates tastes like caramel and when you soak them in a little boiled H2O , they fall apart very easy . I often add a tablespoon of peanut butter, or a little mashed pumpkin ( only needs a little and don’t use too much H2O otherwise they will be too wet ). Also crushed nuts and oatmeal is nice . I just keep changing them all the time and put them in the freezer .
