Ingredients:
  • 2 tablespoons of olive oil
  • 1 chopped zucchini
  • 1 chopped yellow capsicum
  • 1 chopped red capsicum
  • 3 cloves of minced garlic
  • 4 eggs
  • 2 chopped spring onions
  • Chilli flakes (optional)
  • Salt and pepper
  • Fresh herbs of choice
Instructions:
  1. Heat oil in a pan on medium heat.
  2. Add garlic, zucchini, and capsicum. Sprinkle some salt and pepper.
  3. Sauté for about five minutes.
  4. Create four spaces in the pan for the eggs, and crack the eggs into these spaces.
  5. Cover the pan and cook for five minutes or until the eggs are cooked through.
  6. Sprinkle some chopped chilli, herbs, and spring onions on top before serving.


Salad Jar

Salad jars are visually appealing and a convenient way to ensure you're getting a balanced meal. Sarah's Salad Jar is good for one serving, and it’s perfect combination of protein, healthy fats, and fibre.

Ingredients:
  • 100 grams of shredded chicken
  • 1/2 cucumber, chopped
  • 1/2 a carrot, shredded
  • 1 tablespoon of chopped red onion
  • 1/4 cup of chopped cherry tomatoes
  • 1/4 cup of sauerkraut
  • 1/4 cup of brown rice
  • Pepitas (or sunflower seeds) for toppings
  • 1 cup of chopped lettuce
  • For the dressing:
    • 1 tablespoon of olive oil
    • 1 tablespoon of apple cider vinegar
    • Salt and pepper
Instructions:
  1. Layer all the ingredients in a jar.
  2. Pour the dressing over before you eat.
  3. Add some salt and pepper to taste. Enjoy!


Chia Chilli Jam

Chia seeds are a superfood that Sarah incorporates into this unique Chia Chilli Jam. They're packed with omega-3 fatty acids, fibre, and protein, all of which are beneficial for weight loss.

Ingredients:
  • 100 grams of red chillies
  • 100 grams of red cayenne chilli
  • 2 red capsicum, chopped
  • 1/4 cup of honey
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of chia seeds
Instructions
  1. Chop the chilli and capsicum, then put them in a food processor and blend. If you want the chilli to be really spicy, keep the seeds in. Otherwise, remove them.
  2. Transfer the mixture to a saucepan and add apple cider vinegar and maple syrup. Bring it to a boil, then reduce the heat and let it simmer for 15 minutes.
  3. Stir in the chia seeds, then transfer the mixture to a jar and store it in the fridge.
This goes well with everything!



Sarah’s Berry Bowl

Sarah's Berry Bowl combines a medley of strawberries, blueberries, and blackberries with yogurt for a creamy texture and a dose of gut-friendly probiotics.

The recipes look good and I love berries , I have mul berries and raspberries in my garden and also a few capsicums ready to go. But if you want to buy capsicums , it is rather expensive , saw them yesterday $12.- per kilo for red caps.
