Herb Omelette

I usually make this for hubby's breakfast but it is also great for lunch or dinner.

Add other ingredients eg mushrooms, capsicum or grated tomatoes. Just cook any of these in a separate pan before adding and flipping omelette.

Prep time 10 min
Cooking time : 5 minutes

Ingredients

4 eggs
2 tablespoons water
2 tablespoons fresh chopped parsley
2 tablespoons chopped fresh chives
30g butter
1/3 cup butter

Method

1. Break eggs into a large bowl and whisk with a fork. Add the water,parsley and chives. Season well with salt n pepper.

2. Heat butter in small non stick frypan over high heat. When the butter is foaming reduce heat and add omelette mixture all at once. Swirl with a fork several times.

3. While the mixture is cooking tilt the pan and lift the edge of the omelette occasionally to allow the uncooked egg to flow underneath. When the mixture is half cooked sprinkle with the grated cheese. Then leave to cook a little more ( the base should be golden brown) and the inside nearly cooked.
Using an egg lifter fold the omelette in half in the pan. Flip it over onto a plate and serve immediately. If making for lunch or dinner serve with a garden salad on the side

Lovely! Try a wooden spoon instead of a fork to swirl to prevent damage to pan base, especially if your pan is teflon-coated.

You just don't touch the bottom.
 
Wooden spoon method was suggested by my lovely neighbour who has shaky hands due to Parkinson’s Disease. She loves omelets but can only eat them at night due to medication constraints.

Surprisingly, he does care. There’s a little local cafe that we’ll occasionally have lunch and we both will often order omelettes. But he won’t eat my scrambled eggs. They both taste the same to me. And I make quite yummy scrambled eggs.

Wow! I’m surprised at that ! Oh well at least you like them that’s all that matters. I bought an omelette once never again it was disgusting,give me home made anyday.🌞

Well, I’m not the best cook, but I usually like my cooking. 😀 My 4 kids didn’t complain too much back in the day. But how could you go wrong with scrambled eggs? Omelettes on the other hand….

Omelettes are easy until you have to make ten at once🤣
(I had them on my restaurant menu) 😋

My Hubby is the same…. won’t eat scrambled eggs but will eat Omelettes.

Restaurant menu…where, when? I admire your drive and determination.

I’d be too stressed to be responsible for a restaurant or even take on the responsibility of the menu.

It was bad enough when I was a stay-at- home mum for 19 years and had to plan and cook meals. Ugh, that was a chore.

Then a few years later, I worked at the corner deli/cafe and made the breakfasts/ lunches /coffee. I wasn’t very successful. I didn’t last long.

Why were people so fussy? Haha. 😆

When I owned Mount Black Lodge in Tasmania had it for about 20 years. It burnt down at Xmas in the bush fires in 2023 so glad we didn’t own it then we sold up about 5 years prior. All thats left is the slab of concrete it sat on.😢

Dear member DLHM, thankyou for your post. Just scramble the 2 eggs in a bowl first, add one tablespoon of milk into the eggs and stir well. Heat up frying pan with a bit of oil, and then pour the egg mixture into the small frying pan. Leave for 2 to 3 minutes on low heat. When the omelette looks like the texture of a pancake, slide a spatula under the omelette, and slowly turn the omelette over, leave on low heat for another 2 minutes and there you have it, a lovely fluffy perfect omelette. You can put any topping like cheese or tomato on it for flavour and then turn over in half. Suzanne has suggested some brilliant fillings for the omelette. Wishing you success with your omelette.
