Chicken and Risoni Soup

Ingredients

• 6 chicken thighs
• 1 carrot - peeled and diced
• 1 stick celery - de stringed and diced
• 1 onion - peeled and diced
• 1 cup risoni - See note 1
• 6 cups chicken stock
• freshly ground pepper and salt - to taste
• fresh dill to garnish

• Note #1 - I prefer to use 150 grams Filini
Noodles

Method

• In a large pot, bring the stock, chicken, onion, carrot and celery to the boil. Reduce heat and simmer uncovered for 10 to 15 minutes, skimming the top occasionally. Season with salt and pepper.
• Add risoni, and cook for a further 15 minutes until the risoni is cooked and tender.
See Note #1
Remove the chicken thighs from the pot. Shred and return to the pot
• Serve with a garnish of fresh dill, a swirl of extra virgin olive oil and a side of lemon wedges.

• Note #1 At this point I like to add half a cup of frozen peas.

Feeling the sniffles coming on… make a pot of this, in no time you will feel much better!!!

I make a similar recipe. Instead of risoni I use noodles. I also add 1 tablespoon of soya sauce. And add shallots instead of onion and add no herbs.

Whenever anyone in my family are sick they crave this soup.

If I have time I make my own chicken stock or I will use The Maggie Beer chicken broth. It's expensive but well worth it

My mum always made something very similar to this when I was sick….this is not her recipe, unfortunately I have lost that one!!!

Thank you for sharing this soup recipe as this time of the seasons I'm always making Chicken soup. I don't do so much of Beef soups as I find Chicken soup much light to digest and always have thighs or drumsticks in the freezer for "that day".🐔👍
 
My mum always made something very similar to this when I was sick….this is not her recipe, unfortunately I have lost that one!!!
I've made it since my kids were babies and now my kids make it. My son who is a single dad makes it and freezes it so he always has it on hand.

It's so tasty and good for you .

I cut the celery and carrots 🥕 julienne

A really cheap way of making stock is use chicken bones ( available from chicken shops $1 a bag) bring to the boil then simmer low for 4 to 6 hours with chunks of celery ,carrot and onion
I sometimes leave the bones and vegetables in the stock overnight.

Strain the stock and discard bones and vegetables.
Then you have an amazing stock to use in whatever soup ect you want 😋

Is that Leonard's chicken shop? They closed down years ago where I live. Might try a couple of butchers nearby.
