These fritters are easy to make, low in calories, and the perfect way to sneak in some veggies in your everyday meal. Here’s a quick and easy zucchini fritter recipe that’s perfect as a side dish, appetizer, or even a main dish for tonight's dinner.

Ingredients:

1 large zucchini grated in a food processor
1 egg
1/2 cup grated Parmesan cheese
1/4 cup plain flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil or coconut oil
1/2 cup plain yoghurt

Instructions:

1. In a large bowl, combine grated zucchini, egg, Parmesan, flour, baking powder, salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat.

3. Scoop about 1/4 cup batter for each fritter into the skillet.

4. Cook for 2 minutes per side or until golden.

5. Serve with yoghurt.

And there you have it! You now have delicious zucchini fritters in just minutes! You can also serve it with a side salad or with some eggs for protein.

I added a few chilly flakes as well as used garlic oil and that really gave them a pop.
