Zucchini and Bacon Mini Quiches

These delightful little morsels filled with all the flavours you love are perfect for picnics, parties, or just to enjoy with a cup of coffee or tea. Plus, we show you just how simple they are to make with the help of a trusty pie maker! It just takes a few simple ingredients and steps to concoct these bites that will leave your taste buds wanting seconds.

Here are the ingredients that you need:

1. 4 Coles Australian Free Range Eggs
2. 2/3 cup (160ml) pure (pouring) cream or thickened cream
3. 1/4 cup (35g) plain flour
4. 3 sheets frozen shortcrust pastry, partially thawed
5. 2 medium zucchini, thinly sliced
6. 1 spring onion, thinly sliced
7. 2 bacon rashers, finely chopped
8. Chopped chives, to serve


Begin by whisking the eggs, cream, and flour in a large jug until well combined. After that, you can turn on your pie maker to preheat it, and then use a 10.5cm pie maker base cutter to cut out 12 discs from the pastry sheets. Place 4 of these discs in the pie maker holes, then divide one-third of the zucchini, spring onion, and bacon among the pastry bases. Pour in enough of the egg mixture to come up to the edge of each pastry sheet, and close the lid.

Cook these quiches for 8 minutes, or until the pastry is puffed and the filling is cooked through. Repeat this step with the remaining pastry discs, zucchini, spring onion, bacon, and egg mixture to make a total of 12 quiches. Don’t forget to sprinkle some chives on top to really take them up a notch!

Serve your mini quiches warm and your guests will thank you for the truly amazing treat that'll send their taste buds on a delightful journey.

I have a sausage roll maker try this puff pastry and use a version of recipe above just a little less fluid bingo good in lunch box for grandkids and wife's
