So, what’s the secret? It’s all about keeping things easy and letting the slow cooker do the heavy lifting. Here’s how Bec does it.

1. Layer chopped potatoes and carrots in the bottom of your slow cooker.
2. Place a boneless lamb leg roast on top of the veggies.
3. Rub the lamb with a packet of salt-reduced French onion soup mix—no need for fancy marinades or a spice rack full of herbs.
4. Cook 'low and slow' for 6–8 hours. When it’s nearly done, pop the lamb onto a tray and bake at 180°C for 30 minutes to get that irresistible crispy finish.
