We do grazing tables alot I'm lucky having 8 daughters where we can set up just before people arrive so food isn't left out for long.
We are planning an up version of a grazing table for my daughters bridal shower in September.
This is our last grazing table, and even though it's a grazing table you need to have organisation still.

I think I'd like to see the $1000: display vs the $200 home version. Guarantee there won't be any cabana, a packet of salad biscuits, bbq shapes (or other like salted snacks), packet of samboy chips along with some humus from a supermarket. More likely to have high end (more likely inhouse produced) spreads. Plus they would also be setting up, cleaning up and taking away the serving platers etc. Most people accept staff wages are large component of any business operation, so her time spent doing this setup also needs to be considered. I think I know which more relaxing approach I would take and enjoyed the event. If the household budget is the greatest of concern. I doubt I'd be hosting such an event.

For my family we hire a hall and do everything else ourselves including setting up and cleaning up.
 
Professionals have to earn a livinf, shopping, paying staff, preserving, delivering, setting up time all need to be accounted for. Add your own time etc to the Aldi spread and see what the cost looks like..
