The Sydney Opera House has just announced that Opera Bar, along with its neighbour House Canteen, will soon be under new management.

After a highly competitive tender process that kicked off in September 2024, hospitality legends Solotel and Matt Moran are handing over the keys to the rising stars at Applejack Hospitality.

If you’re unfamiliar with Applejack, you might know some of their other popular Sydney venues, think about Bopp & Tone in the CBD, the vibrant RAFI at UrbnSurf in North Sydney, and a string of other much-loved eateries.

They’re set to take the reins at one of the city’s most prized locations for the next ten years.

Change can be a bit nerve-wracking, especially when it comes to a place as beloved as Opera Bar.


But according to the Opera House, Applejack’s winning proposal promises to celebrate Sydney’s rich and diverse food scene, while keeping the relaxed, all-day vibe that locals and tourists adore.

For House Canteen, expect a breezy café atmosphere with a focus on value and accessibility, perfect for a pre-show bite or a lazy Sunday brunch.

Applejack’s founders, Ben Carroll and Hamish Watts, are understandably chuffed.

It’s clear they’re planning to honour the legacy of Opera Bar while bringing their own fresh ideas to the table.


Applejack is expected to officially take over before the summer rush, so you can expect to see some new touches popping up soon.

But don’t worry, major refurbishments are being held off until after the busy season, so your favourite spot for sunset drinks isn’t going anywhere just yet.

With such a prime piece of real estate up for grabs, it’s no surprise that some of Sydney’s biggest hospitality names were vying for the spot.

Industry whispers suggest that The Boathouse Group, Merivale, and Laundy Hotels all threw their hats in the ring, but Applejack’s vision ultimately won over the Opera House.
