Veggie-Loaded Spaghetti Bolognese

Whoever said you can’t have a delicious and healthy dinner in a flash clearly hasn’t stumbled across this Veggie-Filled Spaghetti Bolognese recipe. With just five ingredients and minimal effort, you can have a hearty dinner on the table in no time! You can also opt to serve it with a side of garlic bread or a fresh garden salad if you want to take things up a notch. Sounds like music to your ears? Let’s get to cooking then!
Here are the ingredients you need:
1. 375g of spaghetti
2. 500g of beef and pork mince
3. 3 cups of mixed, frozen vegetables
4. 500g of any bolognese sauce
5. Basil leaves, to serve
Start by cooking the pasta in a large saucepan of salted boiling water. Cook according to the instructions on the packet, or until it's al dente. Don’t forget to drain the spaghetti once it's cooked.
Next, heat up a large greased frying pan over medium-high heat. Add the mince and stir with a wooden spoon to break it up. Cook for about five minutes or until the mince changes colour.
Add the thawed vegetables and pasta sauce to the pan and stir. Reduce the heat to medium-low, before covering it and letting it cook for a further 5 to 10 minutes. Season with salt and pepper to taste.
Divide the cooked spaghetti among bowls and top with the delicious mince bolognese sauce. Finally, garnish with the freshly-picked basil leaves and it’s ready to serve!
