Vegetable stir-fry

This stir-fry is a quick and easy dish to whip up that is packed full of vegetables. It’s a great way to get your daily intake of vegetables and the stir-frying process brings out the natural sweetness of the vegetables. This dish is simple to make and can be enjoyed with a side of white or brown rice!


Ingredients:

1 onion, chopped

1 garlic clove, minced

1 tablespoon olive oil

1 carrot, chopped

1 celery stick, chopped

1 zucchini, chopped

1 capsicum, chopped

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

1/4 teaspoon garlic powder

1/2 cup chicken or vegetable stock

1/4 cup soy sauce

1 tablespoon honey

1/2 cup frozen peas

1/2 cup of rice of choice


Method:

1. In a large wok or frying pan, heat olive oil over high heat.

2. Add onion and garlic and stir-fry for 1 minute.

3. Add carrot, celery, zucchini, capsicum, salt, pepper, oregano, basil, and garlic powder and stir-fry for 3 minutes.

4. Add chicken or vegetable stock, soy sauce, honey, and frozen peas and stir-fry for 2 minutes.

5. Serve with a side of any rice of your choice!

Love stir fried vegies , I eat only that as a meal. I'm going to try this one
