VANILLA POACHED PEARS

I purchased a bag of pears of Friday really cheap and when searching for something to cook using them , I came across this recipe from Donna Hay I made this recipe for the first time yesterday and if there is any such thing as Heaven on a plate then this is it
Serves 3
Recipe can be doubled

Ingredients
  • 2 egg whites
  • 1/2 CUP (110G) CASTER SUGAR
  • 1 TEASPOON CORNFLOUR
  • 1/4 TEASPOON WHITE VINEGAR
  • 1/4 CUP (40G) FLAKED ALMONDS
  • 1/2 CUP (125ML) CREAM
  • 1/4 CUP (75G) MASCARPONE
  • 1 TEASPOON VANILLA BEAN PASTe
  • 1 1/2 CUPS (375ML) WATER
  • 1/4 CUP (75ML) LEMON JUICE
  • 1/3 CUP (85G) CASTER SUGAR)
  • 1 VANILLA BEAN POD, HALVED
  • 2 PEARS, HALVED AND CORE REMOVED USING A TEASPOON ( you will have half a pear left )
METHOD
  1. Preheat oven to 150°C or 130° C fan-forced.
  2. Place the eggwhites in the bowl of an electric mixer and whisk on high speed until soft peaks form. Add the sugar, 1 tablespoon at a time, whisking until each addition is dissolved before adding more. Once all the sugar has been added, scrape down the sides of the bowl and whisk for a further 10 minutes or until the mixture is thick and glossy.
  3. Place the cornflour and vinegar in a small bowl and mix until smooth. Add the cornflour mixture to the eggwhite mixture and whisk for 10 seconds or until combined.
  4. Shape the meringue mixture into 3 rounds on a baking tray lined with non-stick baking paper. Sprinkle with almonds.
  5. Reduce oven temperature to 120°C 100°C fan-forced and bake for 1 hour or until the meringues are dry to touch. Allow to cool completely in the closed oven.
  6. To make the vanilla poached pears, place a medium saucepan over high heat. Add the water, lemon juice, sugar and vanilla and stir to combine. Bring the boil, reduce the heat to low and simmer for 10 minutes. Add the pears and cook for 10 minutes or until just tender. Remove the pears and allow to cool.
  7. Place the cream, mascarpone and vanilla in a bowl and whisk until soft peaks form.
  8. To serve, place the almond meringues on a serving platter and serve with whipped cream, vanilla poached pears and extra syrup, if desired. Serves 3
Notes

You could also use peaches, nectarines or plums

I thought about your comment this morning and realised it probably is extraordinary.
I have a large pantry with everything I use

I have Every kind of flour , plain, self-raising, bread flour , almond flour , rice flour and of course cornflour.

Same with sugars , brown, dark brown, raw, white and caster sugar .

What I also have is a breakfast island and under this is storage and that's where I keep all those spare packets of flours, sugars always x 3 of each. Plus a huge container full of different pasta's.

I have a huge container of just cake decorating items including every colouring you can think of.

A huge container of cooking products, vanilla essence and extract , dried yeast ect

In my laundry I had a huge built in cupboard put in with all shelves, one side is for all the spare tin and jar items eg tomato paste at least 6 bottles , diced tomatoes, no less than 12, garlic jars 6. Canned fruit, sauces eg 6 large bottles tomato sauce. 24 cans tuna ect

I have three fridges with freezers . In one freezer it's ice cream , ice blocks. In another it's frozen vegetables ect. And the last one it's frozen meat . Then I have a chest freezer which has meat . Chicken breast, thigh and whole chickens always 4, mince meat, lamb shoulders always 2, lamb legs always 2, beef brisket always 2.

I buy lamb chops and steak fresh as we need it.

I know it is extraordinary but with 13 kids I always cooked big and well . It was too expensive to go to restaurants so I cooked restaurant quality food for my family.

This is my herb collection which I top up every couple of weeks plus I have a huge herb garden .

I think old habits are really hard to break

Ah Suzanne, if I ever run out of anything I know where to come, you're a legend and I always look forward to recipes you post. I am a big Donna Hay fan, her recipes are always 'no fail' for me and I will certainly be trying this one, thank you for sharing xxx

One of my brothers is like you he says you can never have too much food. Because you never know “when the end is nigh”😹good thing is when I was broke and had no food he bought me and my cat heaps out of his pantry.😍
I've always been like it. I'm guessing because of so many in my family. I've also given alot away to friends family when out of work ect

My sis in cairns is the same she orders all my food for me and always adds extras out of her pocket.im so lucky to have her and miss her heaps. She’s my best friend we did everything together when we were younger. Gotta love family😍

May l ask with 13 children how many bedrooms, bathrooms & w.c's do you have in your home? I realise this is not a single storey home. I guess sharing a bedroom was not uncommon as it was for many families until people started building the modern homes of today.

Strange question l know but my aunt & uncle back in the 50's had 6 boys with an outside laundry & w.c., master bed & 2 small bedrooms with no garage. Parking was on the street with a front door only about 2 .5m from the front fence.

We have 7 bedrooms , yes it's two stories. My son moved in with his girlfriend only last weekend , so now only four at home.

We have a family room down stairs plus a lounge room and an upstairs lounge room where most of my kids watch TV.
They share the upstairs bathroom and hubby and I the downstairs.
We have a large laundry with a toilet as well.
We have a long driveway leading to a double garage that hubby uses as a work shop
We have three fridges one in the kitchen, laundry and garage plus a chest freezer in the garage.

I have an ok size kitchen but can be bigger. We are on a 700 meter block .

We have lived here over 30 years and are looking at down sizing next year. My must have is a larger kitchen I want to do cooking videos on YouTube.

Yes can see life has been squeezy for the family but you all made do. I can understand you needing a bigger kitchen then & in the future. Like the idea of a lounge upstairs for the children's space & a good sized block too with a man cave for hubby.

Over here your block would be divided into 2 or 3 separate lots, such is the situation here & on that someone might build a 2 storey.

Our block is around 550 squ m, 3 bed, triple garage which houses 2 cars. Our eldest daughter & wife's with my oldie outside. My side has timber etc in there.

Hopefully when you downsize you will find a gourmet's kitchen which suits your interests.
