Gaytime Truffles

Here are the ingredients you will need:
  • 360g white chocolate, chopped
  • 90g Caramilk chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1 x 78g Golden Gaytime ice cream, stick discarded, chopped
  • 35g (1/4 cup) malted milk drink powder
  • 200g malt biscuits (You can replace malt biscuits with Gaytime crumbs if available)
  • 400g dark chocolate, chopped

And here are the steps to follow:

1. Grab a bowl that can withstand heat and put the white chocolate and Caramilk in it.

2. In a small saucepan, combine the cream and ice cream. Place the saucepan over medium-high heat, and stir the mixture constantly for about 5 minutes or until it just starts to boil. Remove the saucepan from the heat and add 1 tablespoon of malt powder. Stir everything together until the mixture is smooth.

3. Pour the cream mixture over the chocolate in the bowl. Wait for 5 minutes and then stir everything together until it becomes smooth and well combined. Place the mixture in the fridge and let it chill for 1 hour 30 minutes to 2 hours until it's firm.

4. Take a tray and cover it with baking paper. Take two teaspoons of the chocolate mixture and roll it into a ball. Put the ball on the prepared tray, and repeat with the remaining chocolate mixture. Put the tray in the fridge and let it chill for an hour until the truffles are firm.

5. Put the biscuits in a food processor and process them until they become fine crumbs. Transfer the crumbs to a shallow dish and mix in the remaining malt powder.

6. Take a heatproof bowl and put the dark chocolate in it. Place the bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Stir the chocolate with a metal spoon until it's melted and smooth.

7. Cover another tray with baking paper. Take the truffles out of the fridge and, working in batches, dip each truffle one at a time in the melted chocolate to coat using a fork or truffle dipper. Gently tap the fork or dipper on the edge of the bowl to allow any excess chocolate to drip off.

8. Then, transfer the truffle to the biscuit crumbs and roll it to coat. Put the truffle on the prepared tray and repeat until all the truffles are coated. Put the tray in the fridge for 10 minutes to let the chocolate set. Once done, serve the truffles, and enjoy!

I am surprised that Golden Gaytime has been allowed to keep their name. Snowflakes have had dummy spits about names that have been with us for generations. Prime example is Coon Cheese. The cheese got its original name from American pioneering cheese maker Edward William Coon who patented a ripening process in the 1920s. But snowflakes took exception to the name. Fairy Penguins and black boards are other examples. All this political correctness BS has gone way over the top. I use names and words that I learned growing up and I do not care at all who gets offended if in their opinion I am politically incorrect. In fact I scoff at snowflakes.
