Tortilla Beef Stack

This is a healthier alternative to lasagne

My daughter made this the other night and I have to say it was very delicious

Ingredients​

  • 1 tbs olive oil
  • 1 onion finely chopped
  • 1 kg lean beef mince ( we use the 90% meat 10 % fat )
  • 600 g salsa
  • 35 g taco seasoning
  • 6 burrito tortillas
  • 250 g frozen spinach
  • 1 cup tasty cheese grated


Method​

  1. Preheat oven to 200C. Or 180°C fan-forced
  2. Heat oil in a large pan and cook onion until tender. Add mince and brown.
  3. Add 2/3 of the salsa and sprinkle taco seasoning over meat. Stir and bring to the boil. Reduce heat and simmer for 10 minutes.
  4. Brush a 30cm x 25cm lasagne dish with oil. Place a little of the meat sauce in the base, top with a burrito tortilla cut in half then layer more meat sauce, spinach and then tortilla
  5. Continue layering ending with tortillas. Spread the remaining salsa over tortillas.
  6. Sprinkle with cheese and bake for 20-25 minutes or until cheese is melted. Stand for 10 minutes before serving.

NOTES​

Any of the Mexican brand salsas and seasonings work well.
