Tomato Soup With Greens and Beans

Here we are again, right in the midst of the creeping chill of autumn (and eventually, winter!). Looking for a warm and delicious dish that's easy to prepare?

Look no further than this hearty tomato soup recipe with beans and greens packed full of flavour and nutrition!



Ingredients:

400g low-sodium tomato soup

1 tablespoon olive oil

70g kale, chopped

1 teaspoon garlic, minced

⅛ teaspoon crushed chilli pepper (Optional)

400g cannellini beans, preferably with no salt or low sodium, rinsed

¼ cup Parmesan cheese, grated

Now, we know some of you might have gone ‘Blegh!’ at the sight of kale in this dish, and we don’t blame you. Feel free to swap it out with other greens like spinach if you prefer!

If you have all you need, then get cooking!

Start by heating the soup in a medium saucepan according to package directions. Keep the soup simmering over low heat as you prepare the kale.

Next, in a large skillet, heat the olive oil over medium heat. Add the kale and cook, stirring, until it wilts. This should take two minutes at most. Add the minced garlic and chilli pepper (if using) to the kale, and cook for an additional 30 seconds.

Stir the cooked greens and beans into the simmering tomato soup, and let it cook until the beans are heated through, which takes about 2 to 3 minutes.



Finally, divide the soup into 4 bowls and serve each topped with a sprinkle of grated Parmesan cheese.

This simple and delicious soup is perfect for those chilly days when you want to indulge in something warm and comforting. The added beans and greens provide extra nutrition and a flavour boost, making it the perfect meal option for health-conscious Aussies.

I use to buy soup bone from the butchers but they are so expensive. My soup is onion carrot swede parsnip celery sweet potato beef chicken or veg stock cub water and any veg in the fridge that you need to use up and soup mix or split peas cook on low or in slow cooker for awhile cheap and delish and you can freeze the rest in portion sizes
