This tart is delicious and is easy to make! It is perfect for a light lunch or dinner. The tart is made with a puff pastry base and is topped with a mixture of tomatoes, mozzarella, and herbs. This dish is best enjoyed with a side of salad.


Ingredients:

1 sheet puff pastry, thawed

1 tablespoon olive oil

1 tablespoon tomato paste

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

1/4 teaspoon garlic powder

1 cup cherry tomatoes, halved

1/2 cup mozzarella cheese, shredded

1/4 cup Parmesan cheese, grated

1 egg, beaten


Method:

1. Preheat the oven to 180 degrees Celsius.

2. On a lightly floured surface, roll out the puff pastry to a 12-inch square.

3. Transfer the pastry to a baking dish and trim the edges (if you want too, sometimes the crispy edges are the best bit)

4. In a small bowl, mix together olive oil, tomato paste, salt, pepper, oregano, basil, and garlic powder.

5. Spread the tomato mixture over the puff pastry.

6. Top with cherry tomatoes, mozzarella cheese, and Parmesan cheese.

7. Brush the edges of the pastry with the beaten egg.

8. Bake for 20 minutes, or until the pastry is golden brown and the cheese is melted.

9. Serve with a side of salad.
