Thai Chicken Curry

This dish is a delicious and easy to make Thai chicken curry. It has a fair few ingredients, but hopefully the majority of these are in your pantry already! It’s a great dish for those who want to enjoy a tasty and nutritious meal. This dish is made with an easy homemade curry paste and can be enjoyed with a side of rice.


Ingredients:

1 tablespoon olive oil

1 onion, chopped

1 garlic clove, minced

1 tablespoon grated ginger

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1 teaspoon salt

1/4 teaspoon pepper

1 (400ml) can coconut milk

1 pound boneless, skinless chicken thighs (or chicken breast)

1 tablespoon fish sauce

1 tablespoon brown sugar

1 red capsicum, chopped

1 green capsicum, chopped

1/4 cup chopped coriander

Rice to serve


Method:

1. In a large pot, sauté onion, garlic, ginger, cumin, coriander, turmeric, salt, and pepper in olive oil.

2. Add coconut milk and bring to a boil.

3. Add chicken, fish sauce, brown sugar, red capsicum, and green capsicum.

4. Simmer for 10 minutes, or until the chicken is cooked through.

5. Garnish with coriander and serve with a side of rice.
