Tasty Tofu Scramble Recipe

Tofu scramble is a great vegan alternative to scrambled eggs. Tofu is a versatile ingredient that soaks up flavours, making it perfect for absorbing the spices in this dish. This recipe is easy to make and can be customised to your liking. I like to add in some veggies, but feel free to add whatever you like (or have in the fridge). Tofu scramble is a quick and healthy meal that will leave you feeling satisfied. So, let's get started!
Ingredients:
-1 block of extra firm tofu
-1/4 cup nutritional yeast flakes
-1/4 teaspoon turmeric
-1/4 teaspoon paprika
-1/4 teaspoon garlic powder
-1/2 teaspoon sea salt
-Freshly ground black pepper to taste
-1 tablespoon olive oil or 1/4 cup water
-1/2 cup chopped onion
-1/2 cup diced capsicum
-Handful of kale or spinach
-1/4 cup chopped fresh parsley (optional)
-1/4 cup chopped spring onion
Instructions:
1. Crumble the tofu into a bowl using your hands.
2. Add nutritional yeast flakes, turmeric, garlic powder, salt and pepper, and mix well.
3. Heat olive oil or water in a large pan over medium heat.
4. Add onion and capsicum, and cook for 5 minutes until softened.
5. Add the tofu mixture to the pan, and cook for 10 minutes until browned.
6. Stir in kale/spinach, parsley and spring onion, and serve hot. Enjoy!
Note: You can also serve this on top of toasted bread for more crunch.
