Tasty Shallots & Garlic Focaccia

Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza doughs. It is typically seasoned with olive oil and sea salt. Focaccia can be used as a side to many meals, as sandwich bread, or as a snack. This recipe is for focaccia topped with shallots and garlic.
The garlic and shallots give the focaccia a subtle flavour that is not overwhelming. This recipe is also very versatile. You can add other herbs or spices to the dough to change up the flavour. The possibilities are endless.
This recipe is very easy to follow and only requires a few ingredients. The dough comes together quickly and only needs to rise for one hour. This recipe is perfect for busy weeknights or when you have unexpected guests.
Ingredients:
2 1/2 cups warm water
1 tsp instant yeast
2 tbsp honey
5 1/2 cups bread flour (plain flour works great too)
2 tbsp salt
1/4 cup olive oil
4-5 cloves of garlic, minced
1 cup shallots, chopped
Instructions:
1. Stir together warm water, yeast, and honey in a large bowl and allow to dissolve and sit for 10 minutes to activate the yeast.
2. Add flour and salt to the bowl, scraping the sides to get everything incorporated. Fold in minced garlic and most of the green onions, setting some aside for garnish.
3. Form a rough dough ball and transfer it to a lightly floured surface. Knead for 5-10 minutes.
4. Once the dough has smoothed out, transfer to an oiled bowl and let rise for 1 hour.
5. Press the dough into an oiled casserole dish or sheet pan. Gently spread out the dough, using fingers to give the classic focaccia indents. Let rest for another 20 minutes.
6. Preheat the oven to 220 degrees celsius and bake for 20-30 minutes or until the focaccia has a brown surface. Garnish with remaining fresh green onions, slice, and serve.
You can try using different herbs or spices in the topping, such as rosemary or oregano to make the dish extra special. You can also swap out the flour for whole wheat flour for a healthier version. For a cheesy focaccia, sprinkle shredded mozzarella or Parmesan cheese over the top of the dough before baking.
