Sweetcorn zucchini and bacon slice

Say hello to all the flavours of a zucchini slice with bursts of juicy sweet corn and crispy, salty bacon. Make this easy recipe for dinner and double down for lunch the next day!

Ingredients (8)​

  • 500ml (2 cups) milk
  • 4 eggs
  • 100g unsalted butter, melted
  • 75g (1/2 cup) plain flour
  • 1 zucchini, coarsely grated
  • 2 rindless middle bacon rashers, coarsely chopped
  • 300g can corn kernels, drained
  • 80g (1 cup) coarsely grated cheddar

Method​

  • Step 1
    Preheat oven to 180C/160C fan forced. Grease a 4cm-deep, 18 x 28cm (base measurement) baking dish.
  • Step 2
    Whisk together milk, eggs and butter in a large jug. Season. Sift flour into a large bowl. Make a well in the centre. Gradually whisk milk mixture into flour until smooth. Place zucchini in a colander and use clean hands to squeeze out excess liquid. Add to the bowl. Add bacon, corn and 40g (1/2 cup) cheddar. Season. Stir to combine.
  • Step 3
    Pour mixture into prepared dish. Sprinkle with remaining cheddar. Bake for 50 minutes or until golden and set. Set aside for 10 minutes to cool slightly. Serve warm or cold.
