Sweet and Sour Slow Cooker Pork

There's a reason this classic dish has stood the test of time – it's delicious! There's the tangy sweetness of vinegar, the salty and rich flavour of soy sauce, and a slight hint of chilli. Yum! So for all our members who can’t resist a good Asian-inspired dish, then we highly recommend you whip up this slow cooker version tonight. Just toss the ingredients in and let the slow cooker do its magic.
1. A tbsp of olive oil
2. Eight pork scotch fillet steaks
3. Two red onions, cut into wedges
4. One-third cup of soy sauce
5. One-third cup of tomato sauce
6. Two tbsp of firmly packed brown sugar
7. Two tbsp of white vinegar
8. A quarter tsp of dried chilli flakes
9. Two garlic cloves, crushed
10. 440g a can of pineapple pieces in natural juice, juice reserved
11. A green capsicum, roughly chopped
12. A red capsicum, roughly chopped
13. Two tbsp of cornflour
14. Two green onions, thinly sliced diagonally
15. Steamed jasmine rice, to serve
Start by heating some oil in a large frying pan over high heat. Cook the pork, in batches, for about a minute or two on each side or until it’s nicely browned.
In the meantime, add the red onion, sauces, sugar, vinegar, chilli, garlic, pineapple (along with the reserved juice), capsicums, and cornflour to a 4.5-litre-capacity slow cooker. Toss everything together and add the pork.
Set the cooker to LOW and cook, covered, for 4 hours. Once it’s done, top with green onion and serve with steamed jasmine rice.
