Ingredients:

-1 tbsp olive oil
-2 boneless skinless chicken breasts
-200g pack cherry tomatoes
-2 tbsp pesto
-2 tbsp crème fraîche (half fat is fine)
-fresh basil, if available

Instructions:

1. Heat oil in a frying pan. Add chicken and fry until it browns. Turn the chicken and cook on the other side. Continue cooking until chicken is cooked through—season chicken with salt and pepper.

2. Add tomatoes to the pan and stir until they soften. Reduce heat and stir in pesto and crème fraîche.

3. Top with basil leaves and serve with rice and salad or mashed potatoes and broccoli.
