Stuffed Capsicums

STUFFED CAPSICUMS

9 capsicums (yellow preferred)

2 medium onions

½ tsp Garlic powder

750 g minced steak (ground beef)

Oil to cook mince

1 cup water

2 sachets Chilli Con Carne mix

5 Tbs tomato paste

1 can Red Kidney Beans

1 can corn kernels

Extra water

Mozzarella Cheese (I used shredded)

Parmesan Cheese (I used fresh & grated it)



Cut the tops out of the capsicums

Shake out all the seeds

Scrape out the pith with a teaspoon

Place in a baking dish

Trim the inside of the stalk portions back & remove all seeds

Dice the onions

Drain & rinse the can of Red Kidney Beans

Drain can of corn kernels



Add oil to a deep frypan

Add mince & fry until browned

Add onions, stir in & cook until tender

Add garlic powder



Run 1 cup of water into a measuring jug

Add 2 sachets of Chilli Con Carne mix & stir well

Add to meat mixture in frypan & stir well

Turn down the heat

Add 5 Tbs tomato paste & stir well

Add Red Kidney Beans & Corn Kernels & mix well

Add more water if necessary to form a pasty mixture



Spoon mixture into capsicums until each is a bit under ½ full

Add Mozzarella cheese to each

Add more meat mixture until just below the top & pack down with a spoon

Add more Mozzarella cheese

Place the lids (stalk portions) of the capsicums loosely on top

Half fill the baking dish with water

Cover with foil

Place in a pre-heated 190 C (fan forced) oven for 45 minutes

Take out of the oven & remove the foil & remove the lids from the capsicums (nibble on these)

Grate Parmesan cheese on top & return to the oven for another 30 minutes



Check doneness of the capsicums during the last 15 minutes

Serve, adding more Mozzarella & Parmesan cheese as desired
