Stir-fry Lamb

Serves 4

Ingredients
2 tablespoons oil
600g lamb strips
2 cloves garlic, crushed
1 teaspoon finely grated ginger
1 medium brown onion sliced thinly
1 small red capsicum, sliced thinly
1 small yellow capsicum, thinly sliced
6 shallots sliced thinly
1/3 cup chicken stock
1 tablespoon soya sauce
1/4 cup hoisin sauce
METHOD
1. Heat half the oil in a wok or deep frypan,over high heat; stir fry lamb,in batches, until browned all over. Remove from pan.
2. Heat remaining oil in same pan; stir fry garlic,ginger and brown onion until onion is just tender. Add capsicum and shallots stir fry until capsicum is just tender.
3. Return lamb to pan with combined stock and sauces; stir fry until sauce boils and thickens slightly.
Serve with steamed white rice or noodles. I also sometimes serve with Asian greens
