Steak with Chimmichurri Sauce

My sons love Chimmichurri sauce and I found Aldi sirloin steak was very reasonably priced .

Ingredients

4 medium sirloin steaks ( I purchased a pack of 6 for $24 from aldi)
1 tsp salt
1/2 teaspoon pepper
2 tablespoon vegetable oil

SAUCE

1/2 cup fresh coriander leaves roughly chopped
1/2 cup fresh parsley leaves roughly chopped
1 onion finely chopped
1/2 lemon, juiced
2 teaspoon white wine vinegar
1 clove of garlic minced
Pinch of chilli flakes
1 tsp salt
1/2 tsp pepper
1/3 cup olive oil

METHOD.

1. Pat steaks dry with paper towel. Season all over with salt n pepper and set aside for 15 minutes to bring to room temperature

2. To make the sauce, place coriander, parsley, onion, lemon juice, white wine vinegar , garlic, chilli flakes, salt n pepper in a bowl of food processor and pulse until until roughly chopped.

3. Slowly Pour olive oil and process until semi smooth.
Transfer to a small bowl and set aside.

4. Heat a gril pan over medium to high heat. Brush both sides of steak with the vegetable oil, then cook, undisturbed for 90 seconds for rare, or 3 minutes for medium, or 5 minutes for well done. Turn and cook for same ammount of time on the other side.

5. Transfer to plates and let rest 5 minutes. Slice and serve with the Chimichurri sauce.

Serve with chips n salad or steamed vegetables and mashed potato
