Spinach and Ricotta Cannelloni

The cannelloni is filled with a mixture of spinach and ricotta and then baked in the oven. This dish is usually served with a side of salad or bread.
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon ground nutmeg
1/2 cup dry white wine
1 (400g) can diced tomatoes
1 bunch or (250g) package of fresh spinach (any type)
1 (250g) tub of ricotta cheese
1/4 cup grated Parmesan cheese
1/2 cup mozzarella cheese
1/4 cup plain flour
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
12-15 cannelloni tubes
1. Preheat the oven to 190 degrees Celsius.
2. In a large pot, sauté onion, garlic, salt, pepper, oregano, basil, and nutmeg in olive oil.
3. Add white wine and bring to a boil.
4. Add diced tomatoes and simmer for 10 minutes.
5. Add spinach and cook until wilted.
6. In a bowl, mix together ricotta, Parmesan, mozzarella, flour, eggs, salt, and pepper.
7. Fill each cannelloni tube with the ricotta mixture.
8. Place the cannelloni in the tomato sauce and bake for 30 minutes.
9. Serve with a side of salad or bread.
