Spiced Pineapple Pork is a dish that is traditionally prepared by marinating pork in a mixture of pineapple juice, soy sauce, and spices. This dish is so easy to cook and is absolutely delicious! Ingredients:
-500grams pork loin, trimmed of excess fat and cut into four equal portions
-1/2 cup pineapple juice
-1/4 cup soy sauce
-1 teaspoon ground ginger
-1 teaspoon garlic powder
-1/4 teaspoon ground cloves
-1/4 teaspoon ground nutmeg
-1/4 teaspoon ground cinnamon
-1/4 teaspoon ground black pepper
-1/2 pineapple, peeled, cored, and cut into four wedges
-2 tbsp. olive oil
Instructions:
1. Combine pineapple juice, soy sauce, ginger, garlic powder, cloves, nutmeg, cinnamon, and pepper in a large resealable bag. Add pork to the bag, seal it, and turn to coat the pork with the marinade.
2. Heat oil in a large ovenproof skillet over medium-high heat. Add pork to pan; cook for 2 minutes on each side or until browned.
3. Preheat the oven to 190 degrees Celsius.
4. Place skillet in oven; roast pork and pineapple for 20 minutes or until a thermometer inserted into pork registers 68 degrees C.
5. Serve pork with pineapple wedges and rice.
To make this dish extra special, you could try serving it with a side of roasted vegetables. You can also add some chopped scallions to the pork rub. Serve with a side of mango salsa.
