Speedy tarragon and garlic mushrooms

Are you tired of the same old appetiser recipes? Then try this speedy tarragon and garlic mushrooms recipe for a twist on a classic dinner starter. This dish is an easy-to-make and delicious combination of mushrooms, garlic and tarragon, bursting with flavour. These buttery, garlicky mushrooms are perfect for serving alongside a steak or as a topping for toast.
Ingredients:
25g butter
2 tbsp extra virgin olive oil
250g button mushrooms
250g cup mushrooms
2 tsp finely chopped fresh tarragon
2 garlic cloves, crushed
1 tsp lemon zest
25g goat’s cheese, crumbled
Instructions:
1. Heat up some butter and oil in a large frying pan on medium-high heat until they start bubbling.
2. Add the mushrooms to the pan and cook for around 10 minutes, stirring occasionally, until they turn golden and tender.
3. Add tarragon, garlic, and lemon zest to the pan and stir for 30 seconds until fragrant. Season with salt and pepper, then sprinkle some goat's cheese.
4. Serve mushrooms hot. Enjoy!
To make the dish extra special, you can add some parsley for an extra pop of colour or replace the goat’s cheese with some grated parmesan for a cheesy twist. You could also add a splash of white wine or some cream for a richer flavour.
