Spanish Rice

Ingredients

1 red onion finely chopped
1 red capsicum seeded and cut into 1cm pieces
1 Green capsicum seeded and cut into 1 cm pieces
1 long chili chopped I used chili flakes and maybe 1/2 teaspoon
2 chorizo sausages cut into 1 cm slices
1 and a 1/2 cup of medium white rice or risotto
2 garlic cloves crushed or 2 teaspoon of jar garlic
2 tablespoons of smoked paprika
2 teaspoons ground cumin
2 teaspoon ground coriander
400g can of chopped tomatoes
1 cup of chicken stock, Campbell's or homebrand ect


Method

1) Heat a little oil in frypan
Add onion, capsicum and chilli stirring occasionally until soft for 5 minutes. Transfer to a bowl

2) cook chorizo in the same pan, turning occasionally, cook 5 minutes or until lightly brown. Stir in the rice, garlic, cumin, paprika and coriander, cook stirring for 5 minutes

3) add capsicum mixture back to pan with the rice and chorizo

4) stir in tomato and stock. Bring to the boil then reduce the heat and simmer, covered for 25 minutes . Take from the heat and let stand covered for 10 minutes

NOTE: you can vary the spices by adding less or more, if you don't like to hot reduce chilli or leave out altogether

If you click on the link they put in its a completely different recipe with chicken in it
No it’s okay I’m not going to make it anyway I forgot to buy rice and I hate chorizo but love chicken livers pity I can’t get any livers but thanks for letting me know😋

Woolworths sell chicken livers in a little pot .. next to the chicken hearts.
Really I’ll have to check it out, I wish I could find offal no one seems to sell it anymore. Yet when I lived in tassie it was always available in woollies for my recipes. 😊

Alot of chicken shops in Sydney sell offal. The chicken liver recipe I make you are supposed to also use chicken gibblets. The chicken liver rice recipe is a Greek dish that you either cook in an oven bag or inside a chicken or meat ribs
