Spanish Rice

Ingredients
1 red onion finely chopped
1 red capsicum seeded and cut into 1cm pieces
1 Green capsicum seeded and cut into 1 cm pieces
1 long chili chopped I used chili flakes and maybe 1/2 teaspoon
2 chorizo sausages cut into 1 cm slices
1 and a 1/2 cup of medium white rice or risotto
2 garlic cloves crushed or 2 teaspoon of jar garlic
2 tablespoons of smoked paprika
2 teaspoons ground cumin
2 teaspoon ground coriander
400g can of chopped tomatoes
1 cup of chicken stock, Campbell's or homebrand ect
Method
1) Heat a little oil in frypan
Add onion, capsicum and chilli stirring occasionally until soft for 5 minutes. Transfer to a bowl
2) cook chorizo in the same pan, turning occasionally, cook 5 minutes or until lightly brown. Stir in the rice, garlic, cumin, paprika and coriander, cook stirring for 5 minutes
3) add capsicum mixture back to pan with the rice and chorizo
4) stir in tomato and stock. Bring to the boil then reduce the heat and simmer, covered for 25 minutes . Take from the heat and let stand covered for 10 minutes
NOTE: you can vary the spices by adding less or more, if you don't like to hot reduce chilli or leave out altogether
