Ingredients:
1 brown onion, chopped
1 carrot, peeled and chopped
1 celery stalk, rinsed and chopped
2 cloves garlic, minced
2 cups low-sodium vegetable broth
1 can diced tomatoes, undrained
2 medium potatoes, peeled and diced
1 cup of green beans, chopped
2 bay leaves
1/2 teaspoon dried thyme
1/2 teaspoon salt and freshly ground black pepper
1 1/4 cups frozen or fresh corn kernels
1/3 cup chopped fresh parsley
Instructions:
1. In a skillet, heat olive oil over medium-high heat. Add onions, carrots, and celery and cook for 4 minutes. Stir in garlic and cook for 30 seconds, until fragrant. Remove from heat and transfer to a slow cooker.
2. Get your slow cooker and add diced tomatoes, potatoes, and green beans.
3. Cover with vegetable broth, and add salt, pepper, thyme, and bay leaves.
4. Cover and set the slow cooker to high for 4 hours or low for 6 to 8 hours.
5. Add corn for the last hour of cooking. Adjust seasoning with salt and pepper. Remove the bay leaves, sprinkle the slow cooker vegetable soup with fresh chopped parsley, and serve immediately.
To make this dish extra special, top it with some shredded cheese, croutons, or a dollop of sour cream.
