Slow Cooker Teriyaki Drumsticks

For a fuss-free meal that's sure to blow everyone away, try this delicious Teriyaki Drumsticks recipe. The sweet teriyaki sauce, the strong flavour of garlic, and the satisfying crunch of the bok choy takes this dish to another level. You can easily prep the meal in just 10 minutes, and it's perfect for a budget-friendly family dinner. The best part? You only need to get your hands on a few key ingredients and a slow cooker to get started!
Here are the ingredients you need:
1. One tbsp of peanut oil
2. 10 chicken drumsticks
3. 80ml of light soy sauce
4. Two tbsp of rice wine vinegar
5. Two tbsp of honey
6. One tsp of sesame oil
7. Two tbsp of brown sugar
8. Three garlic cloves, thinly sliced
9. One tbsp of finely chopped fresh ginger
10. One bunch of bok choy, sliced lengthways
11. Steamed brown rice, to serve
12. Thinly sliced green shallots, to serve
13. Toasted sesame seeds, to serve
Start by heating the peanut oil in a large non-stick frying pan over high heat. Then, add the chicken drumsticks. Cook them, turning occasionally, for 10 minutes or until they turn brown before transferring them to a slow cooker.
In the meantime, combine the soy sauce, vinegar, honey, sesame oil, and sugar in a large bowl.
Add the garlic and ginger to the frying pan and cook them over high heat for 30 seconds or until aromatic. Add the soy sauce mixture and stir thoroughly until combined. Pour the contents of the pan into the slow cooker. Cover and cook on low for 5 hours or until the chicken is very tender. Don’t forget to add the bok choy during the last 15 minutes of cooking.
Scoop some rice into serving bowls. Divide the teriyaki chicken drumsticks and bok choy mixture among the bowls. Top it all off with shallots and toasted sesame seeds to serve. Bon appetit!
