Here are the ingredients you need:
1. Four pork loin chops
2. A tablespoon of any basil pesto sauce
3. Two cheese Slices, quartered
4. 500 grams of baby white potatoes
5. 250 grams of a mixed salad kit
To begin, preheat your oven to 200°C and line a baking tray with baking paper. Cut a large slit in the thickest part of each pork chop – just make sure you don’t cut it all the way through. Then, divide the pesto and cheese among the slits.
Next, heat a large non-stick frying pan over medium-high heat. Once it’s hot enough, cook the pork for two minutes on each side or until they’ve browned nicely. Transfer the pork to the lined tray and into the oven. Bake for eight to ten minutes or until the pork is cooked through.
Meanwhile, place the potatoes in a large saucepan and cover them. Bring the pot to a boil over high heat, then reduce it to medium and let the potatoes cook for ten minutes. Refresh them under cold water, then drain and slice them.
Prepare the salad in a large bowl following the packet instructions. Once it’s ready, add the sliced potatoes to the bowl and gently toss until just combined. Finally, divide the pork, salad, and potatoes among serving plates and season with salt and pepper.
