Sea Bass with Cannellini Bean Stew

This hearty and flavourful dish features nutrient-rich sea bass fillets atop a bed of cannellini beans, with a medley of savoury vegetables and aromatic herbs to round out the taste.


Ingredients:

2 tbsp olive oil
1 medium onion, diced
2 carrots peeled, diced carrot
2 stalks of celery, diced
3–4 garlic cloves, chopped
2 cups of tomatoes/1 can of tomatoes, diced
2 cans of cannellini beans, rinsed and drained, OR 1 1/2 cups dried beans, soaked overnight
Chicken stock (2 cups if using canned beans, 4 cups if using dried beans)
240 ml water (only if using dried beans)
2 tablespoons fresh sage, thyme, or rosemary
1/2 teaspoon kosher salt
1/4 teaspoon cracked pepper
4 sea bass fillets (or preferred fish)
oil, salt, and pepper (for fish seasoning)
Parsley for (garnish)

If you have all you need, feel free to get cookin’!
Start by heating olive oil in a medium-large pot over medium-high heat. Once the oil is heated, add the onions and stir for two minutes. Then add the carrots, celery and garlic, turn the heat to medium and sauté for about 5 minutes.

Now it's time to add in the beans and the stock.

If using canned beans, toss them into the pot along with 2 cups of stock, herbs and tomatoes. Season with salt and pepper, give it all a good stir and bring it to a boil. Then turn the heat down to low, cover, and simmer gently for 10-15 minutes.


If you're using dried beans, it's important to soak them overnight or up to 24 hours in plenty of water so it won’t take long to get them soft enough to eat. Once they've been soaked, add the beans and 4 cups of stock to the pot, and then an additional 1 cup of water. The herbs, salt and pepper should also be added at this stage. Increase the heat to high, bringing it to a boil, then reduce the heat to low, cover, and let simmer 1-1½ hours or until the beans are tender. If it's getting a bit dry, add a bit more water, then add the tomatoes and pepper, and simmer for a further ½ hour.

Finally, the fish. Pat dry the fillets of your chosen fish with paper towels and season generously with kosher salt and pepper. Heat 1-2 tablespoons of olive oil in a cast-iron skillet over medium-high heat. Once heated, add in the fish and sear each side until a golden crust forms, then turn the heat down to cook through to the desired doneness.
