Sausage and Lentil Stew

Ingredients

2 tsp olive oil

500g pork chipolata sausages

1 brown onion, halved, sliced

1 (125g) chorizo sausage, finely diced

2 x 400g cans diced tomato with oregano and basil

400g can lentils, drained, rinsed

2 tbsp chopped fresh flat-leaf parsley leaves

Directions

First, warm the olive oil in a large, heavy-based saucepan over medium-high heat. Sizzle the chipolata sausages in batches, turning them now and then for five minutes or until they're browned all over. Once done, gently transfer them to a plate for later.

Add the sliced onion and diced chorizo sausage to the pan. Cook, stirring occasionally, for about five to six minutes or until the onion becomes tender and the irresistible aroma starts wafting through the air.

Now, stir in the diced tomatoes with oregano, basil, and lentils. Bring the delightful mixture of sausages back to the pan, and cover. Crank up the heat and let it boil. Once it starts bubbling away, lower the heat to a medium-low setting.

Simmer, uncovered, for a good 25 minutes or until the sausages are cooked to perfection and the sauce is thick and luscious. Finish it off by generously sprinkling with fresh and flavoursome flat-leaf parsley.
